Soft Coconut Ball Cakes

Ingredients.
125g butter
3/4 cup castor sugar
2 eggs
2 tsp baking powder
1/2 tsp vanilla essence
Approx 2 cups flour
Apricot jam.
 

Cream butter and sugar well..add eggs one at a time. Form dough with remaining ingredients. You will need a little more flour to bring the dough together. Break dough into a nice small size and roll into a ball Place on a greased baking tray, slightly press with two fingers. Bake at 160 till slightly brown. ..about 8min. Warm the apricot jam till it’s thin, using a spoon spread the jam and roll the cakes in coconut
An option can be made into snowball...just color the coconut or make white snowballs
